Hibernia is one of a kind, don’t miss it if you like good artisan food with character and passion. The restaurant is quite small, with a half dozen tables. All the tables of the restaurant overlook a garden full of artwork collected from Southeast Asia, especially Bali. The food is Thai and Asian fusion. It is unique and charming. We would say it is a luxury not to miss if you are serious to explore the real hidden gems in Anguilla.
Known for its excellent food specialized in Far East Thai cuisine; the chef is a real food chef. It’s cooking with the main ingredient to the fore and only the most suitable accompaniments. Even quinoa is made to be interesting. It turns out to be inspired and delicious. The owner is very welcoming. If you don’t have a car, even send someone to pick you up.
From the garden to the art of lighting and ambiance; you can even leave for dessert if you can. Every detail is curated and considered. A different Caribbean experience without a background or reggae barbecue or traditional fish presentation, Hibernia hits the mark. If you want to enjoy your senses with sparkling water, dripping pool water at your table’s edge, or the smell of native bushes or delicately savor, precisely prepared food; without any doubt, it is a fantastic place to visit in Anguilla.
